This article discusses the issues of food safety and security as a matter global health. Foodborne illness deaths caused by pathogens in continue to be worldwide problem, with reported 600 million cases per year, leading around 420,000 2010. Predictive microbiology can play crucial role ensuring safe through mathematical modelling estimate microbial growth behaviour. Food is described social economical means accessing nutritious that meets people's dietary preferences requirements for an active healthy life. The also examines various factors influence security, including economic, environmental, technological, geopolitical challenges globally. concept science-based process or action prevents from containing substances could harm human receives limited attention policymakers consumers low- middle-income countries, where are most prevalent. highlights importance detecting contaminants prevent foodborne illnesses reduce waste. Mathematics of predictive food microbiology.

Commonly encountered problems related to modelling bacterial growth in food are analysed from a mathematical point of view. Modelling techniques and terms, some misused, are discussed and an attempt is made to clarify how, and under what conditions, they may be used. A theoretical framework is given to provide a basis in which mathematical models having been used in predictive microbiology can ...

Quantitative microbiology: a basis for food safety.

Because microorganisms are easily dispersed, display physiologic diversity, and tolerate extreme conditions, they are ubiquitous and may contaminate and grow in many food products. The behavior of microbial populations in foods (growth, survival, or death) is determined by the properties of the food (e.g., water activity and pH) and the storage conditions (e.g., temperature, relative humidity, ...
